Did you know that many of the spices labeled 'Cayenne Pepper' are actually a mix of cayenne and another milder species of pepper? The reason is that cayenne by itself is so hot that many people are reluctant to use it alone. A less fire-y blend sells better in most cases.

However! If you really want the heat, or if you want to make your own blend, there is no substitute for 100% cayenne. That's what this is. It's rated in excess of 60,000 heat units, and is labeled with warnings about its use. Please do observe them. We don't want anyone to get this in their eyes, or for anyone's child or pet to accidentally get hold of it.

So what can you do with pepper this hot? First, use just tiny amounts wherever you want iits distinctive taste. Unlike some of the most extreme chili peppers, cayenne isn't so hot that its flavor is obscured by the heat. Tiny amounts in chili, Indian recipes, sausage and wherever you like the heat are enough. It goes a long way.

Have you ever tried Mexican cocoa? You might not think that chocolate and cayenne would go together, but indeed they do. Just a dash is enough to start with. You can always adjust it for taste if you like it a bit more spicy.
