She says "Cut from the thick middle section of a Cod fillet, Cod Loins are the prime cut of the Cod fish. High in Omega-3, it brings a tender, flaky texture and a mild, slightly sweet flavor to the plate of those who don't care for "fishy" tasting fish."

Ingredients for cod loins
1-1/2 - 2 pounds cod loins
6-8 strips bacon, typically 1-1/2 - 2 strips for each loin
Southwest Seasoning
Fresh lemon juice (optional)
Ingredients for Southwest Seasoning
8 tsp. cumin
8 tsp. chili powder
4 tsp. finely ground oregano
4 tsp. smoked paprika
4 tsp. coriander
4 tsp. onion powder
1 Tbsp. garlic powder
2 tsp. finely ground grains of paradise
1 tsp. cayenne pepper or finely ground crushed red peppers
1 tsp. celery seed

To make up the seasoning, mix all ingredients thoroughly, store in an airtight container in a dark cupboard. For best results all ingredients should be as equally ground as possible. An inexpensive spice grinder works perfectly when grinding the grains of paradise seeds as well as giving any spice a fine texture.
To prepare the cod, rinse the loins and pat dry. Sprinkle both sides of each loin with Southwestern Seasoning then wrap each piece of fish tightly with bacon. Place wrapped loins in heated pan and cover with a splash screen or loosely wrapped foil to trap some heat. Fry on medium heat until the bacon is crisp then flip and fry the other side until the bacon is crisp.
Serve with freshly squeezed lemon juice.
