Botanically identical to Mexican cinnamon. Ceylon Cinnamon has a sweet warm aroma, not as sharp or strong as Cassia (the most common variety of cinnamon found in grocery stores). It also has a negligible amount of coumarin, a compound that can cause liver damage when used in large amounts or over an extended period. If you use cinnamon every day, this is the proper one to use.
If you're using Golden Paste for a dog or horse, you may possibly find that the animal develops a "cat pee" odor. Most do not, but if your pet is one of the few who do, Ceylon Cinnamon is the "cure." Simply add about one tablespoon to a typical batch of Golden Paste (the standard recipe that uses 1/2 cup turmeric). You can also sprinkle Ceylon Cinnamon over the pet's feed.
