Masala Chai Mix

Masala chai means 'tea' (chai) with 'mixed spices' (masala). But it is also common to hear it referred to as just chai. 'Chai tea' is never correct (what you're saying is 'tea tea'). So when you're dining out at your favorite Indian restaurant, ask for masala chai, or if you prefer, just chai. And at home, make your own with our Masala Chai spice mix and your favorite black tea.

You can use any black tea, in teabags or loose. We lke the Taj Mahal brand of black oolong, but that's a personal preference, and any good quality tea is fine. You will strain the spices out of the mixture after it heats, so loose tea is easy to use.

Unlike many other brands, ours does not include sugar or powdered milk. This is not an instant beverage, just the spices. So each cup costs less, because the product isn't bulked out with sugar or milk powder or fillers. You need only a small amount per cup. And because it doesn't contain milk, you can use whatever milk you prefer.

Directions are on the label, but it's very simple. For each 8-10oz cup, heat about 3/4 cup of water. When it comes to a boil, turn off the heat and add 1 tea bag or one tablespoon of loose tea. Let that steep for 1-2 minutes. Then add 3/4 cup of your preferred milk and 1/2-1 teaspoon of the Masala Chai spice mix (I like it strong, so I always use 1 teaspoon). Heat just until it comes to a boil again (watch it carefully because the milk will boil over otherwise). Remove the tea bag if you used that instead of loose tea. Strain the mixture through a small strainer into a cup or mug, and enjoy! Masala chai is typically served very hot, so sip carefully.

It's also traditional to sweeten it heavily. We hope you won't do that. I don't normally sweeten tea or coffee, but I do put a tiny bit of jaggery (raw cane sugar) in my masala chai. If you don't have jaggery, you could use any brand of raw sugar or brown sugar. The taste won't be exactly the same with brown sugar, but it's closer to jaggery than white table sugar.

There are many regional and individual preferences for the spices in masala chai, depending on who you ask and where they're from in India, Bangladesh or Pakistan. This recipe was given to me decades ago by Indian friends, and over the years, I have tweaked it a bit to suit myself. Our Chai Masala comes in a good-sized (80g/8 fl oz) recyclable HDPE jar, with instructions printed on the label.

Masala chai is also a wonderful vehicle for golden paste, whose spices blend beautifully with those of the chai. Many people put their golden paste in coffee, but if you're not a coffee drinker, masala chai is a perfect substitute.
