Mention ‘mustard’ and everyone thinks of their favorite yellow hot dog condiment. Or maybe you prefer the more earthy brown mustard in all its variations. Whichever one floats your boat, mustard has a lot more going for it than just hot dogs and potato salad.

Mustard is actually one of the oldest of the known spices, right on up there in antiquity with black pepper and turmeric. Pliny the Elder, a Roman author and military commander, even made a condiment with mustard seed and vinegar, the earliest known use of mustard in that way. It was probably common already in that time period, but this is the only known mention of it.

Yellow, brown and black varieties of mustard grow all over the world now, but they originated in the Middle East. By Pliny’s time, mustard grew throughout the Mediterranean region. This variety, Sinapis alba, is also sometimes known as ‘white mustard,’ but the seeds can be any color from white to yellow to light brown. They are less pungent than the darker brown Brassica juncea or the black Brassica nigra, and thus blend well with a variety of other spices without dominating the flavor of the mix. This is the same mustard that we include in our curry powder and garam masala mixes.
