Fennel 'seeds' are actually the fruit of the fennel plant, but it's common to refer to the whole fruit as the seed. Fennel is of Mediterranean origin, but has spread across the whole world now. It's available in two forms, one which is primarily grown for its seeds (fruits) and one which produces an enlarged bulb at the base of the stem. Fennel turns up in a surprising variety of uses. It's one of three herbs that make up the liqueur absinthe, and is also used to make the Swedish liqueur akvavit. The leaves can be used in place of dill, and the seeds are used for flavoring everything from desserts to toothpaste.

Like fennel powder, fennel seed provides a lovely light anise taste in many foods, and can be infused to make a sweetly flavored tea (with no sugar required). Just add a teaspoon of fennel seeds to a cup of boiling water. For additional taste and zing, add fresh ginger or ginger powder to taste, or a slice of orange of lemon. Most fennel tea recipes say to add honey or sugar, but not only is that not healthful to begin with, it isn't necessary. This tea stands on its own without sweeteners. Besides just being very flavorful, fennel is a rich source of potassium, manganese, zinc, iron, calcium and magnesium. It was traditionally used to relieve indigestion and bloating, to soothe nausea and to stimulate milk in nursing mothers.
